White radishes (daikon) are a staple of Asian cooking, and they make wonderful fridge pickles, but if you have run out of ideas for how to use these very prolific, easy to grow, and healthy vegetables, you might like to try radish mash and radish cakes.

Peel, slice and boil daikon until soft. Drain  and mash, then put in a colander lined with tea towel, and press as much liquid out as you can. Daikon have a lot of water!  Add some salt, and if you like, some fried mushrooms and meat or plant based sausage bits. You can serve this alongside anything you might serve with potato mash, and save some calories without sacrificing deliciousness.

You can also mix the mash with an egg or two, some spring onions, and herbs or spices you like, and a bit of flour (rice flour or wheat flour), just enough to make little patties.  Fry the patties in a little hot oil for a delicious snack, side dish, breakfast or light meal.
